Step 1

Milk does not boil, leave for 24 hours, then pour pepsin and put in a warm place for 1-1.5 hours.

Step 2

Hands collect the curd into a single lump, put in a bowl, pull in "rope". Dip in boiling water and then pull in length. The finer the thread get better.

Step 3

The resulting cheese long "rope" cut into equal parts and weave "scythe" - three, six or nine bands. Sprinkle with salt, wrap in a clean cloth and put in a dark place for 2-3 days.
