Chikhirtma ChickenAnd one more Georgian dish for today - chikhirtma. This wonderful soup won me over the first time. He is both delicate and rich, delicious and flavorful. And some very tricky ingredients for cooking does not require. Although the technology of preparation, there is one feature - thickening the soup with the help of egg yolks.

Chicken - the most common option for chikhirtma filler. There are also variations with lamb, but they are not so popular.

Ingredients 6 servings:

3 chicken drumsticks
1.5 liters of water
salt to taste
1 cinnamon stick
pinch of saffron
1/4 tsp ground coriander
3 medium onions
3 tsp corn or wheat flour (my polenta)
4 egg yolks
2 tablespoons lemon juice
2 tablespoons chopped cilantro
1 tablespoon chopped basil
1 tablespoon chopped mint


Drumsticks put in a pan, fill with water, salt, bring to a boil and cook over medium heat until cooked meat, about 30-40 minutes. Always remove the foam.

While the chicken is cooked, finely chop the onion and fry it in vegetable oil until translucent state, about 5-7 minutes.

We take out the chicken from the broth, the broth itselffilter, cast one glass, the rest return to the pot. Put in a pan of cinnamon stick, coriander and saffron. Bring to a boil and cook over medium heat for 5 minutes, then take out the cinnamon.

Whisk whisk egg yolks until smooth,add to them 1 tsp corn flour, then with constant stirring slowly pour half cup of broth. Add the lemon juice, stir and set aside to the side.

In a separate bowl mix the remaining cornflour with the remaining broth and fried onions.

Enter while stirring this mixture into the broth in a saucepan and cook over medium heat for 5-7 minutes.

Meanwhile, remove the meat from the bones and parse it into pieces.


After 7 minutes, remove the pan from the heat and give the stand on the desk for 3-5 minutes. Then, with constant stirring in a thin stream pour the egg mixture. Immediately add the chopped parsley.
