Step by step recipe for cooking
Take frozen squid and put them in the minutes20 in ice water. Not warm, unable to goryachuyu- into ice. So we get rid of the large "ledyshek" without prejudice to the tender meat of squid. In principle, you can simply pre-defrost in the refrigerator carcass, which I usually do. Boil water in a large kastryule- water should be a lot, squid should not be "close". I take 4-quart saucepan. Put salt- about 1/2 tablespoons take out the squid from the cold water (if they have not been previously thawed) and remove ridges and inside, do not touch the film. As water zakipela- put into it prepared squid and pinpoint exactly 5 minutes. 5 minutes from the moment of boiling, namely from the time of immersion in boiling water squid.
Time passed. Discard the boiled water, pour the squid in cold water and wash. Again put on the stove a pot of water. Getting completely clean the squid: the film is already easy to go. A new piece of water zakipela- put salt again and our refined squid and again timed 5 minutes after the dive. After 5 minutes, pour out the hot water, squid washed with cold water, sprinkled with a little lemon juice and put in a sealed container until use. Squid, cooked in this way, is exceptionally tender and soft.
My favorite salad of squid. Cut the squid into strips, hard-boiled quail eggs finely crumble, add the finely diced fresh or pickled cucumber and chopped green onions. For those who does not tremble from the dreaded word "mayonnaise" - it runs salad, I use as a sauce sour cream 10% (Valio), a little Salts.
