The ribs with mango and tequila sauce


  • 3 kg of veal or mutton ribs
  • 2 large mango
  • 2 small hot pepper chili
  • 3 cm fresh ginger root

  • 4 tablespoons oyster sauce
  • 1/2 cup tequila
  • juice and zest of 2 limes
  • 4 tablespoons honey
  • salt, freshly ground black pepper

Step by step recipe for cooking

Step 1

Ginger crush. Mango peel and cut to the bone. In chile, remove seeds and white walls, cut into the flesh.

Step 2

Chop the chilli, mango, ginger in a blender, add the oyster sauce, tequila, ketchup, lime zest and juice, honey, salt and pepper.

Step 3
