- 3 kg of veal or mutton ribs

Ginger crush. Mango peel and cut to the bone. In chile, remove seeds and white walls, cut into the flesh.
Chop the chilli, mango, ginger in a blender, add the oyster sauce, tequila, ketchup, lime zest and juice, honey, salt and pepper.
Remove the ribs from the top of the film, cut into pieces of 2-3 ribs of thickness. Now spread them on all sides sauce, close the foil and leave in the refrigerator for 3-4 hours.
