Salo put in the freezer for 20 minutes. Pig carcase cut along the rib cage. Cut the legs and head, carefully remove the bones, leaving like meat with the skin layer.
The meat, which remained on the bones, cut and with lean pork mince flesh.
Salo cut into small cubes, add the minced meat and salt.
Boil hard boiled eggs, tap it with a spoon, so that the shell cracked, cool under cold running water and clean. Cut each into 4 pieces.
On the inside of the meat with the skin layer Put half of the minced meat, slices of egg lay on top and cover with the second part of the meat.
Fold the pig roll and tie in several places with string. Put in a large pot of boiling salted water (the water should completely cover zavivanets) and bring to a boil.
Carrots, onions and parsley clean. Remove the foam, add the onion, carrot, parsley, bay leaf, pepper and salt in a saucepan and cook over low heat, covered 2-2.5 hours.
Ready zavivanets remove and put under slight pressure in a cold place for 4 hours. Serve cold, cut into circles.
